El objetivo principal de este estudio fue analizar los factores que están afectando negativamente la industria lechera de Puerto Rico. La producción total de leche esta disminuyendo cada año y la demanda por leche Fresca íntegra esta disminuyendo. Por otro lado el consumo de leche UHT (Ultra High Temperature) y leche Fresca baja en grasa, están aumentando. El principal problema es que los ganaderos reciben menos ingresos por cada litro de leche excedente. Este estudio se realizó durante los años 2005 y 2006, y pudo proyectar con certeza la crisis que vive hoy en día la Industria lechera en Puerto Rico. El libro abarca un análisis completo de esta industria y calcula las elasticidades de precio para la leche fresca y leche UHT.
